'The Snake and Apple' returns to Eden with a tasty twist next door

A hidden gem in Lamoille County is back open for business, bigger and better than ever, and ready to serve Vermonters looking for a fresh meal and a cold beer.

Just off Interstate 100 in the small town of Eden, you will find The Snake And Apple.

"The people are great, the service is great, and that was the best prime rib I've had in a long time," said Ed Ploof, an Eden resident.

Holly Oldham was the manager of the grill and bar when its previous owners had to close up shop.

"It's been a long journey," Oldham said. "It's a labor of love."

But when Holly and her husband, Charlie, were approached to run the show, they jumped at the opportunity to give their neighbors a place to eat.

"We can steer the ship, but the community is the wind on our back. It's very important that we can provide that space for them," Charlie Oldham said.

The Oldhams added in a little something of their own. Eve's Other Side is on the other side of the kitchen. It's their brand new breakfast and brunch joint, offering a wide selection of locally sourced food or a brew to add to your morning routine.

"The idea is you sit down, you hang out and meet new people, make new friends, have a mimosa or a bloody Mary," Charlie said.

All led by head chef KC Agim who found his love for his craft at a young age. Since opening their doors, KC said the town of Eden has been in their corner through all the ups and downs.

"Before we opened, when we had a little soft opening, the vibe was always high," Agim said. "People are always coming in even before we had full staff. They always had patience and just wanted us to succeed."

In the short time the two restaurants have been open, people from Eden and beyond have already caught wind of the new food in town, and consider it a necessity for a town that doesn't have many dining options or a space for the community to unwind.

"The more we can do for small businesses, the better," Ploof said.

Friday was open mic night, a chance to listen to a tune or two.

"They said they wanted to host music here, and I was like, count me in. How can I help? This is happening in my community. I want to support local music any time I can," said Frank Erickson, a resident of Eden.

Everyone is welcome, so be sure to stop by and grab a menu.

"You have to try it," Ploof said. "If you come once, you will come back."
